Tomato & Bottle Gourd Soup

Bottle Gourd is India is known as 'Lauki' or 'Dhudhi'. Some people are not a fan of it but when you make it into a soup its really good.
Tomato and bottle gourd soup is just the tomato soup but with a twist of bottle gourd in it and moreover, it does not even get the taste of bottle gourd in it.

Sabudana Wada or Tapioca Pearls Cutlets

Happy Navratri to all of you!

Navratri the festival of riot of colors and occasion dedicated to the worship of Goddess Durga. This festival is celebrated for 9 nights and 10 days.
Indians across the globe celebrate it with a lot of joy, frolic, and enthusiasm. Some people even keep fast for all the 9 days and consume no garlic, no onion, and common salt.
They eat fruits, potato , falhari (sabudana/tapioca pearls) , buckwheat flour etc food which gives them energy throughout the day .

So , my todays recipe is on the occasion of Navratri . The food item that can be easily consumed by people on fast and the rest can enjoy it as a snack .

This dish is made out of Tapioca Pearls / Sabudana which is the most common ingredient used during the fasting period.
The wada / cutlets when deep- fried turns out to be extremely crispy , delicious and filling.

I tried so many recipes earlier of eggless brownie but some used to be either too floury or too gooey or too dry .

Two Ingredient Cookies

These are the easiest cookies to be made. Just 2 ingredients: Banana & Oats and you are done.

The cookies that are Gluten – Free, Dairy – Free, Egg-Free, Sugar –Free, Oil/Butter - Free and most importantly Guilt Free. I mean what else do we need!

Perfect cookies for anybody, they are filling and at the same time, you get the nutritional benefits of banana and of oats too. In this, you can use any mix-ins of your choice like : choco chips, walnuts, raisins etc. They are perfect for breakfast, picnics, road trips or any occasion.

Rava Dhokla / Semolina Cake

Dhokla is an Indian dish that originates from Gujrat, India. It is one of the healthiest breakfast, a dish for the main course, snack or high -tea . Usually , it is a fermented batter which is made from Gram Flour (Besan) . This Dhokla is yellow in color. This is also known as 'Khaman' or 'Dhokra' or 'Semolina Cake'

The recipe of  Rava Dhokla is just a different version of Dhokla as it is made out of Rava or Semolina and it is white in color and no fermentation is required for the batter . It is a very healthy snack and can be eaten hot or cold .

One-Ingredient Pasta

Hello Everyone, 

We all have heard and even made pasta in white sauce. Well, the white sauce is either made up of oil and flour or with cream, which makes it thick and creamy.

The variation in this dish is that the Pasta is in the white sauce but with only one main ingredient 'Milk'.
When the milk, water, and pasta boil together, it'll automatically thicken because of the pasta added to it.

One Ingredient Pasta is the hassle - free, oil free & this pasta doesn't need the prior boiling of pasta or, making the white sauce or adding cream to it.
This pasta will get creamier in its own way.

Chicken Scotch Eggs

A Scotch egg consists of a hard - boiled egg wrapped in the meat (chicken/pork / lamb/beef  ), coated in bread crumbs and baked or deep fried. Well, the deep fried version is more popular and juicy   

The ones that I made are coated in chicken mince which makes it very light and rich in protein.
I have made this as an 'Appetizer' dish but it can even be made into a 'Main Course ' dish when served with Curry.
