Pasta and Corn Soup

It is very rightly said - ‘Soup is cuisines kindest course - Virginia Woolf ‘

A delicately flavored pasta and corn soup. The aroma of fresh herbs and the vibrant color makes it more than just a soup. This soup is a like a meal, its a filling and rich soup.
It even helps in weight loss. 

You can store the soup in air tight container in the fridge for up to 5 days.
Apart from Penne Pasta other pasta can also be used like:  spiral, ribbon, fusilli etc.

Pasta and Corn Soup

Pasta and Corn Soup- What else you want when there is Pasta!

Prep time : 5 minutes
Cool time : 15 minutes
Total time  : 20 minutes
Serves : 4

Ingredients :
  • 1/2 Cup Onion chopped
  • 2 cloves Garlic chopped
  • 3/4 Cup Cream Style Corn or Sweet Corn tin
  • 1/2 Cup Pasta
  • 1 Tsp Olive Oil
  • 4 Tbsp Tomato Purée 
  • 10 – 12 Fresh Basil leaves or dried basil leaves
  • Salt and pepper to taste
  • Pinch of Red Chilly flakes
  • Parmesan Cheese for Garnishing

  • Combine the onion, garlic and olive oil and sauté it.
  • Now add cream style corn, basil leaves, tomato purée and pasta. Mix it well 
  • Add 3 cups of water and bring it to boil. 
  • Add salt and pepper and red chili flakes and mix well. Let it boil for 10 minutes or till the pasta is well cooked.
  • Serve hot and garnish with parmesan cheese if required.

Note: Instead of the normal pasta, gluten free pasta can also be used in the soup.
