Bajra (Pearl Millet) Ka Halwa

Bajra is also known as ‘Pearl- Millet'.  Pearl Millet is a Gluten-Free cereal grain. Bajra is produced in India (one of the largest producer) and Rajasthan is the largest producer of Bajra.

It's a high source of energy, extremely high in vitamins, minerals, potassium, zinc, calcium, iron. Pearl Millet (Bajra) has the highest source of protein i.e 14.5 % as compared to other millets.
There is plenty reason why everybody should include Bajra (Pearl Millet) in their diet:
  • ·         As earlier said, High source of energy
  • ·         Prevents from heart diseases
  • ·         Helps in suppressing down the thyroid
  • ·         Possesses anti-diabetic effect
  • ·         Has anti-oxidant properties

 This is the main reason why Bajra is widely used for breakfast, dessert, cookies, main course, or you can say practically it can be used in everything!

In India, especially during winter season Indian make Bajra Rotis or Pearl Millet Flat Breads as it develops heat in the body and gives them energy. Moreover, one Bajra Roti without the ghee contains only 22gm carbohydrates so this makes it highly healthy and I believe everyone should include it in their diet.

My today's recipe is Bajra Ka Halwa. It is an Indian dessert which is less caloric, sugar-free and gluten-free. I relish it most during winters being a high source of energy and rich in calcium, zinc, potassium etc.

Prep Time: 5 Minutes
Cook Time: 20 Minutes
Total Time: 25 Minutes
Serves - 4

Ingredients :
  • 1 cup or 150gm – Bajra Atta (Pearl Millet)
  • 1 big spoon – Ghee
  • 100gm – Jaggery
  • 1 cup – Water
  • Raisins- 20
  • Grated Almonds for Garnishing

Method:
  • Firstly, sieve Bajra atta. In a pan take ghee and roast bajra atta. Keep roasting until you get its aroma.
  • In the meanwhile, in the second pot take water and add jaggery. Keep boiling till the jaggery doesn’t get dissolved in water. Add last add the raisins to it and boil.
  • Now, strain the jaggery water and add it to the bajra atta, let it cook on simmer. Keep stirring on betweenKeep cooking until the ghee starts leaving the edges.
  • Serve it in a bowl and garnish with grated almonds.
